And there we can think about the levels of sugar, sodium, and unhealthy fats that we see in many processed foods today. So we would invest in things like improving the fibre content of lentils and beans, exploring the cholesterol lowering capabilities of barley. We would look at barley protein nanoparticles as a way to encapsulate other bioactives that would reduce cardio vascular disease or diabetes.

According to Dr. Cornelia Kreplin, some research partners include Alberta Health and the Alberta Livestock and Meat Agency.

Thanks today to ALBERTA INNOVATES BIO SOLUTIONS

Learn more at InnovationAnthology.com

I’M CHERYL CROUCHER

Guest

,

, , , ,

Sponsor

Alberta Innovates Bio Solutions

The Alberta Innovates consolidation launched on November 1, 2016.

As part of the Alberta Innovates system, AI Bio Solutions invests in research and innovation to grow prosperity in Alberta’s agriculture, food and forestry sectors.
